MODELING CHOCOLATE (or sometimes called candy clay!)

It's my new favorite medium for making all the decorations on the cakes.  It's really easy and fun to do the figure's and cutouts with.  And, it definitely has a much better flavor than fondant, in my opinion.  It's made by melting your favorite chocolate chips or candy melt wafers and stirring in some corn syrup to make it into a "dough" consistency.  The candy melt wafers are so easy to find now in any craft store and even some convenience or grocery stores as well.  They come in many colors and you can even add coloring to them when you're making it to achieve the perfect color you want.   If you google candy clay, you'll be able to see tutorials of how to make it with the different ratio of candy melts to corn syrup.  Lot's of fun to do with the kids! (:

FONDANT :

Fondant flavor is typically a vanilla buttercream flavor or marshmallow flavor.  If you're not familiar with fondant, it is a sugar dough that is rolled out very thin and placed over the entire cake OR used as the medium for cutting out and molding the decorations that are placed on the cake.  I tend to like the flavor of buttercream covered cakes much more than fondant covered cakes.  So, I typically only cover my cakes with buttercream and will use fondant occasionally for decorations if for some reason the modeling chocolate isn't quite strong enough for what I need.

CAKE TIERS:  

Each layer of cake is 2 layers of cake with a buttercream filling in the middle.  All of my cakes are frosted with homemade buttercream and decorated with designs and cut-outs made from modeling chocolate. The prices below include a topper made from chocolate or paper, basic theme decor and the birthday boy or girls' name and age on the decorated cake.
